The real problem with Nutri-Score isn’t that it exists. The real problem begins when a colored letter becomes, in the consumer’s mind, a biological permission.
An A on a package doesn’t mean the product respects your metabolism. It only means that an algorithm, based on a few declared criteria, ranks it better than other products in the same industrial jungle. That’s a very different matter. Nutri-Score can help compare two labels. It cannot read your blood sugar, your 10 a.m. hunger, your insulin resistance, your digestion, your level of satiety, or how your brain will react thirty minutes after eating.
Here lies the central misunderstanding: a nutritional comparison tool has been given the appearance of a true food detector.
The Algorithm Doesn’t See the Body
Nutri-Score penalizes certain elements like energy, sugars, saturated fats, or salt, then rewards others such as fiber, protein, fruits, vegetables, legumes, nuts, or certain oils depending on the algorithm version. In France, the algorithm has recently evolved to better align with nutritional recommendations and to tighten some classifications.
But even improved, it remains a grid. It scores what is measurable on the label. It does not measure what the food triggers inside the body.
It doesn’t measure absorption speed. It doesn’t measure insulin response. It doesn’t measure true biological nutrient density. It doesn’t measure deep satiety. It doesn’t measure eating behavior after ingestion. Nor does it measure what ultra-processing does to the brain: textures designed to be swallowed quickly, aromas, crunchiness, sweetness, immediate reward, rapid return of hunger.
This is where the Athletic Carnivore approach becomes interesting: it doesn’t just ask which food is good or bad, it seeks to understand what that food triggers in you.
The Industry Knows How to Speak to Algorithms
An industry that knows how to reformulate a product also knows how to optimize a score. You lower sugar a bit. Add fiber. Replace part of an ingredient. Adjust salt. Enrich. Fractionate. Modify the recipe to better fit the category.
The product can then appear better on the packaging without becoming biologically coherent food.
This is the modern trap: confusing score improvement with metabolic terrain improvement. A food can be less bad than before and still fail to properly nourish a human body. It can contain slightly less sugar and still fuel sugar cravings. It can display fiber and remain ultra-processed. It can be technically “better” yet never produce the calm satiety that a real animal meal—dense, simple, and protein-rich—can provide.
The body doesn’t read packaging. It responds to signals.
Insulin, Satiety, and Food Noise
Nutri-Score doesn’t tell you if a breakfast will keep you stable for five hours or send you hunting for a sugary coffee at 10:30 a.m. It doesn’t say if a product promotes true protein satiety or just temporary fullness. It doesn’t say if your brain will receive a clear nutritional signal or a brief stimulation followed by a crash.
Yet this is often where weight loss is won or lost.
In a well-constructed carnivore or low-carb logic, the key point isn’t to collect well-rated foods. The key point is to reduce food noise: fewer glycemic spikes, less repeated insulin, fewer trigger foods, less false hunger, more complete proteins, more tolerated animal fats, more nervous stability.
A meal composed of meat, eggs, or fish may score poorly in some simplified modern nutrition readings, especially if saturated fats are viewed in isolation. Yet biologically, this meal can provide much clearer satiety, an almost zero carbohydrate load, and direct nutrient density: essential amino acids, heme iron, zinc, B12, choline, creatine, carnosine.
Nutri-Score cannot properly value this metabolic logic.
Comparing Products Is Not Understanding Nutrition
Let’s be precise: a nutritional logo can have its use. For someone lost in a supermarket, it can help spot clearly unfavorable products. It can also push some manufacturers to reduce sugar or salt. That’s not nothing.
But human nutrition isn’t built with letters. It’s built with repeated biological signals.
If your day starts with a well-rated product but poor in truly satiating protein, then continues with snacks, energy fluctuations, and nervous hunger, the algorithm may have won. Your metabolism, however, has lost.
The issue isn’t to demonize a tool. The issue is to put it back in its place. Nutri-Score is an industrial indicator. Not a metabolic coach. Not a true food detector. Not a reading of your terrain.
The danger is when a population already disoriented by nutritional messages replaces food common sense with aisle signage. We no longer ask: “Does this food truly nourish me?” We ask: “What letter is displayed?”
The Real Question
Athletic Carnivore starts from a different question: after eating, what happens to your body? Does your energy hold? Does your hunger calm? Does your sleep improve? Does your training recover better? Does your digestion settle? Do your compulsions decrease?
This is exactly the kind of difference the Athletic Carnivore questionnaire seeks to detect: not just what you eat, but how your body responds, compensates, recovers, and demands.
A letter can guide a purchase. It cannot replace observing the living.
And as long as we confuse a package score with a health signal, the industry will always have a step ahead of biology.
Real food doesn’t need to seduce an algorithm: it must first speak correctly to the human body.
