Farewell to the Caloric Surplus Myth

You've been hammered with a simple equation to the point of nausea. To gain muscle, eat above your expenditure. To cut fat, eat below. Period. Bodybuilders have chanted this for decades, calorie tracking apps confirm it every night, and your coach reminds you when the scale stalls. It has become a natural law, a mathematical certainty. Yet, you notice something unsettling. On a carnivore diet, some people lose fat while firming their muscles without tracking a single number. Others, in slight caloric deficits, continue to progress in the gym. Still others, eating to satiety, see their physique reshape without any change in total weight. This isn’t magic. It’s because your body isn’t a scale. It’s a hormonal system, and the carnivore diet exposes exactly what the caloric dogma overlooks.
The central misunderstanding runs deep. Thermodynamics is real: to build tissue, you need matter and energy. No one disputes physics. But what the surplus and deficit dogma ignores is what your metabolism does with calories once they’re inside. In conventional nutrition, rich in repeated carbohydrates, insulin remains chronically elevated. It becomes the baseline hormone. When you create a surplus in this context, your body is already locked into storage mode. The muscle receives an anabolic signal, yes, but adipose tissue receives the same command with equal intensity. The result: you gain weight, but everywhere. Fat piles up around muscle, and you end up cycling through bulking and cutting phases where you build five kilos of mass only to gain three kilos of fat, then cut losing fat and some muscle along the way. This is the cost of defective metabolic partitioning.
The carnivore diet changes this hormonal baseline. By eliminating repeated carbohydrates and processed foods, you reduce insulin to a pulsatile role rather than a chronic one. Between meals, insulin is low. Your body switches to lipolysis, mobilizing its own reserves. At mealtime, leucine from animal proteins triggers muscle protein synthesis via mTORC1 activation without requiring a massive, prolonged insulin spike. Muscle receives the order to build, while adipose tissue stays in the background because the hormonal environment no longer favors permanent storage. This is why a carnivore practitioner can, on the same caloric intake or even a slight deficit, achieve what classic bodybuilders separate into two opposing phases: gaining muscle while losing fat. The body does not violate thermodynamic laws. It simply makes them more efficient because the signaling pathway changes.
But there is another, less visible yet decisive lever. Standard nutrition, with its refined vegetable oils, additives, and carbohydrate excesses, sustains chronic low-grade inflammation. This inflammation blurs metabolic signals. It makes muscle less sensitive to anabolism and adipose tissue more resistant to mobilization. When you switch to carnivore, you drastically reduce this inflammation. Signaling pathways clear. The efficiency of each meal improves. The same steak, the same egg, the same piece of fish produce a different effect because the terrain receiving them is no longer cluttered. This is where calorie counting becomes a misleading abstraction. One hundred grams of protein in an inflamed, insulin-resistant body does not build the same as one hundred grams of protein in a calm, insulin-sensitive body.
Yet, carnivore is not a license to believe calories no longer matter. Two carnivore practitioners can eat the same amount of meat and get opposite results. One, young, a beginner coming from a disruptive carbohydrate past, will gain muscle simply by eating to satiety because their sensitivity is maximal and their body is relearning partitioning. The other, older, trained for ten years, with elevated cortisol and fragmented sleep, will plateau despite heavy plates because their anabolic threshold has shifted, chronic stress diverts resources toward survival rather than building, or they eat too lean and their body burns protein for energy due to insufficient fat. The variable is not the carnivore label. The variable is the terrain.
The cost of clinging to the caloric dogma on carnivore is twofold. On one side, the person who blindly imports surplus logic stuffs themselves with animal fat beyond real needs, thinking more calories equal more muscle. They gain visceral fat, burden their liver, and wonder why carnivore "doesn't work" for their aesthetic goals. On the other side, the person who believes carnivore cancels all energy laws eats to satiety without pushing quantities, stalls in the gym, loses motivation, and concludes muscle isn’t for them. Both are wrong. The first applies a rule from a carbohydrate world to one that no longer works the same. The second ignores that even improved partitioning has limits, and an advanced athlete will eventually need to increase intake deliberately to force adaptation.
What carnivore reveals is not that calories don’t count. It’s that they don’t count the way you’ve been told. They are not interchangeable units you add and subtract on a spreadsheet. They are hormonal signals, triggers of metabolic pathways, messages your terrain interprets according to its history, age, sleep, stress level, and leucine sensitivity. The real risk isn’t eating too much or too little. The real risk is correcting the wrong parameter while believing you’re respecting a universal law that was never universal.
If you’re on carnivore, training, and unsure whether to eat more, less, or simply differently, the question may no longer be choosing between surplus and deficit. The question is understanding how your body partitions what you give it, and why, for you, the response doesn’t match the dogma.
