Fruits, Vegetables, and Insulin: Understanding Their Metabolic Impact

Fruits and vegetables enjoy an almost untouchable status. They are associated with health, nature, prevention, and balance. Yet, the body does not metabolize a reputation. It metabolizes molecules. Glucose, fructose, fibers, starches, polyols, antinutrients, water, minerals, plant compounds: each food triggers a different response, but no response is magical simply because the food carries a positive image.
The first misunderstanding concerns insulin. Much is said about blood sugar, far less about the hormonal effort required to manage intake. A food can cause a moderate blood sugar spike but still contribute to a high insulin frequency if consumed repeatedly. Frequency matters. The body does not experience just one isolated meal. It experiences a repetition of signals over a day, a week, a year.
Fruits are mainly concerned due to their sugar content: glucose, fructose, and sucrose depending on the variety. Glucose directly stimulates blood sugar and insulin. Fructose, on the other hand, is processed more by the liver. It may seem more discreet because it does not raise blood sugar in the same way. But this subtlety is not harmless. The liver must process it, and in a context of frequent consumption, energy excess, or insulin resistance, this load becomes significant.
Vegetables raise another question. Some are very low in carbohydrates and have a modest metabolic impact. Others provide more starch or sugars. But their effect is not limited to sugar. Fermentable fibers, FODMAPs, lectins, oxalates, or certain plant compounds can alter digestion, produce gas, irritate sensitive intestines, or confuse satiety signals. What is presented as “light” can be very heavy for a sensitive digestive tract.
Fiber is often the main defense argument. It sometimes slows absorption, increases volume, and feeds certain bacteria. But slowing is not canceling. A carbohydrate load remains a carbohydrate load. And for some people, fibers do not improve comfort; they increase bloating, fermentation, abdominal pressure, and discomfort. Transit depends not only on fiber but also on salt, water, fat, bile, the nervous system, physical activity, and the amount of residue to move.
This is where the carnivore approach offers very concrete experience. By temporarily removing fruits, vegetables, fibers, cereals, and fermentable plant products, digestive and insulin noise is sharply reduced. The body receives meat, salt, water, natural fat, sometimes eggs or fish depending on tolerance. For many, this simplification makes signals clearer: true hunger, satiety, flat belly, stable energy, reduced sugar cravings.
This does not mean every fruit or vegetable is a universal poison. It means their “healthy” status should not prevent biological evaluation. A sporty person, insulin-sensitive, very active, may tolerate certain intakes differently than an insulin-resistant, tired, sedentary person with cravings and disturbed digestion. The same food does not produce the same effect in two different contexts.
The real mistake is confusing nutritional density with nutritional image. Compared to red meat, eggs, liver, fatty fish, or seafood, many plants offer lower useful density, more variable bioavailability, and a more complex digestive load. Their value must be discussed in context, not imposed as an obvious truth.
Insulin, leptin, ghrelin, and cortisol do not respond to slogans. They respond to actual load, frequency, sleep, stress, and overall dietary composition. If someone eats fruits all day, large portions of vegetables at every meal, “healthy” starches, smoothies, and snacks, they may well maintain an unstable metabolism while believing they follow a flawless diet.
The question is therefore not “Are fruits and vegetables good or bad?” The question is: what do they trigger in you? Hunger or satiety? Calm belly or fermentation? Stable energy or rollercoaster? Mental clarity or fog? Fat loss or stagnation? Until these questions are answered, it’s not nutrition. It’s dogma recitation.
And what if some foods considered indispensable were simply less essential than the metabolic stability they disrupt in many people?
