There was no criminal trial. No handcuffs. No prison.
But there was something far more corrosive: internal archives, letters, sums of money, a clearly written objective. And at the center, three Harvard scientists whose work helped cement a narrative that dominated half a century.
History doesn’t unfold first in a laboratory. It begins in media panic.
Project 226
In 1965, sugar became a credible suspect in coronary heart disease. The Sugar Research Foundation, the American sugar industry’s scientific lobbying organization, realized a shift was possible.
So it did what industries do when science threatens their sales: it funded an “authoritative” review to steer the verdict before the trial.
This operation had a file name: Project 226.
The plan was simple. Select literature that exonerated sugar, amplify studies blaming saturated fats and cholesterol, then publish in an untouchable journal. The target was the New England Journal of Medicine.
The three people at the center were no strangers. They carried weight, and that’s precisely why the move was powerful.

Money and the influence mechanism
Internal documents analyzed from the sugar industry archives show the Sugar Research Foundation paid $6,500 for this work. Adjusted for inflation, this would amount to several tens of thousands of dollars today.
But the most troubling detail isn’t just the amount. It’s the mechanism.
Internal correspondence reveals the industry didn’t just fund the research. It shaped the framework of the analysis, discussed the content, and monitored the progress. The final publication did not clearly disclose this funding or the influence exerted.
The result appeared in 1967 in the New England Journal of Medicine under the title “Dietary Fats, Carbohydrates and Atherosclerotic Disease.”
The message was clear: the major problem in modern diet was saturated fats and cholesterol. Sugar was relegated to a secondary role.
The spotlight shift
This shift profoundly influenced global nutrition.
Ten years later, in 1977, the U.S. Senate published the first national dietary recommendations with the report “Dietary Goals for the United States.” For the first time, a government officially advised reducing animal fat consumption and fundamentally changing the population’s diet.
The problem was that solid experimental evidence remained limited at that time.
Many conclusions relied on observational studies—statistical correlations between certain diets and diseases. But these studies cannot prove direct causality.
Despite this, the idea that red meat and animal fats posed a major health risk gradually became cultural consensus.
The following decades transformed this hypothesis into dogma. The food industry reformulated products. Fats were replaced by refined carbohydrates. Processed cereals became the foundation of many recommendations. Supermarkets filled with “low fat” foods.
Meanwhile, metabolic diseases exploded.
A historical question
What the archives reveal is not just a possible scientific error. It’s a moment when industrial interests, prestigious academic institutions, and political decisions intertwined to shape the modern vision of nutrition.
For nearly half a century, red meat was placed in the dock.
But if the indictment itself was influenced from the start, one question remains.
What if one of the greatest nutritional trials in history was scripted before science had truly presented its evidence?
What Project 226 really shifted
Project 226 didn’t just buy an article. It shifted the debate’s center of gravity. By directing attention toward saturated fats and cholesterol, it made a crucial question harder to address: what does chronic sugar exposure do to the liver, insulin, triglycerides, and hunger?
Sugar doesn’t need to be an acute poison to become a collective problem. It only needs to be daily, cheap, culturally normalized, and scientifically under-discussed. The liver converts part of fructose into lipids. Insulin responds to repeated carbohydrate influxes. Ghrelin and leptin signals become less readable in an ultra-processed food environment. The result isn’t an instant catastrophe but a slow drift.
This is precisely what the Harvard-Sugar affair shows: biased research can change the mental map of an era. It can decide which food is suspect, which is banal, which number is monitored, and which mechanism is forgotten.
The lesson for Athletic Carnivore is simple: never confuse social consensus with metabolic proof. Biology always ends up presenting the bill.
