The can of sardines you think is healthy might not be telling the whole story

Canned sardines have everything to attract someone seeking a simple, nutrient-dense, animal-based food compatible with a low carb or carnivore approach. Complete proteins, omega-3s, calcium when you eat the bones, vitamin D, vitamin B12, selenium, affordable price, long shelf life. On paper, it’s almost the perfect food.
But there’s one detail many never check: the sardine you buy isn’t just a sardine. It’s a sardine plus an industrial process, a cooking oil, a covering oil, a can, a sauce, sometimes sugar, sometimes additives, sometimes a marketing promise that doesn’t exactly reflect what your body receives.
The trap often starts with a reassuring phrase: “sardines in olive oil.” You imagine a noble little fish, gently prepared in a good Mediterranean oil. But in the world of canned goods, “in olive oil” often refers mainly to the covering oil—the oil added to the can at filling—not necessarily the oil used for pre-cooking.
And that’s where the reading changes.
In a recent Label Rouge specification for sardine preserves, the INAO clearly distinguishes pre-cooking by frying, the type of frying oil, and then the type of covering oil. The document states that for this category, the oil used for cooking the sardines is sunflower oil, while extra virgin olive oil concerns the covering, the final “filling” of the can.
This point doesn’t mean all sardines in olive oil are “bad.” It means something more important: the visible label alone isn’t always enough to understand the actual process.
For someone eating conventionally, this detail might seem secondary. For someone following an Athletic Carnivore, low carb, keto, or strict carnivore logic, it’s not trivial. The goal isn’t just to avoid sugar. It’s also to reduce confusing food signals: heated vegetable oils, sweetened sauces, starches, flavorings, unnecessary ingredients, fats that don’t match your metabolic terrain.
The sardine itself is interesting because it’s a small fatty fish, generally less problematic than large predators regarding mercury. FDA/EPA recommendations classify sardines among the preferred fish in their mercury-level-based consumption guide. But this natural benefit can be degraded by what’s added around it.
The central mechanism here isn’t “the sardine is good” or “the sardine is bad.” The mechanism is the quality of the lipid signal.
When you eat a natural sardine, with water and salt, you mostly get the fish: its proteins, natural fats, minerals, bones, and flavor. When you eat a sardine in sweetened tomato sauce, marinade, heated vegetable oil, or a “gourmet” recipe filled with secondary ingredients, you’re no longer just eating an animal food. You’re eating a construction.
And this construction may not send the same metabolic signal.
In a well-managed carnivore or low carb approach, the aim is often to simplify to better read the body. Fewer ingredients. Fewer mixtures. Fewer food excitants. Fewer invisible compromises. Canned sardines can help with this simplicity, but only if they don’t become a gateway to oxidized oils, industrial sauces, or recipes that look more like processed products than animal foods.
That’s why the first real question when facing a can isn’t: “Is it in olive oil?”
The first question is: what exactly are the ingredients?
In Europe, labeling of prepackaged foods must be visible, legible, honest, precise, and the ingredient list must be indicated in descending order of weight. This means the truth is often on the back, not the front. The front sells an idea. The ingredient list tells the real structure of the product.
A good can, in a strict or very clean carnivore logic, should ideally look like this: sardines, water, salt. Possibly “natural,” “in salted water,” “in brine,” or “steam-cooked” when the brand specifies it. Here, the product remains readable. The body receives the fish, not a recipe.
An acceptable can for someone more low carb than strict carnivore might be sardines in extra virgin olive oil, provided you understand the need to distinguish covering oil from cooking method. The issue isn’t being a purist for the sake of it. The issue is believing that a noble mention automatically cancels out the entire process.
A more questionable can starts when sunflower oil, rapeseed oil, soybean oil, sweetened tomato sauce, starch, flavorings, “preparation,” “recipe,” “marinade,” “Provençal style,” “escabeche,” or any formulation that turns sardines into a carrier for secondary ingredients appears. The Codex allows different covering media for canned sardines, provided the ingredients are food-grade and comply with relevant standards; this governs food safety but doesn’t say if the product aligns with your personal metabolic goals.
Then comes the question of origin and traceability. For seafood products, labeling may include commercial name, scientific name, production method, FAO fishing zone, and sometimes fishing gear; the DGCCRF reminds that the FAO fishing zone is an important regulatory detail for marine-caught products. This isn’t a gourmet detail. It’s a way to know if you’re buying an identifiable food or just an interchangeable can.
We must also talk about packaging. In France, ANSES reminds that the use of bisphenol A has been banned since January 1, 2015, in food containers, including cans. At the European level, EFSA indicates that the European Commission adopted a BPA ban in food contact materials in December 2024 following its risk reassessment. This doesn’t mean all coating issues are definitively resolved. It means choosing a can isn’t just about the fish: the container is also part of your exposure terrain.
But beware: this article isn’t an invitation to become paranoid about every can.
It’s an invitation to stop reading products through slogans.
Sardines can be an excellent food. But the right sardine for your terrain might not be the one your eye picks first. If you’re on a strict carnivore diet to calm digestion, inflammation, or cravings, a natural sardine will often be more logical than a sardine in sauce. If you’re on a flexible low carb, athletic, metabolically stable plan, a good sardine in olive oil can have its place, but it remains useful to understand its process. If you react poorly to vegetable oils, have digestive issues, or want to clean your diet as much as possible, then the mention “olive oil” isn’t enough: you need to check cooking, ingredients, and overall coherence.
The invisible cost here isn’t just eating a bad can occasionally. It’s believing you’re eating “perfectly clean” while regularly introducing signals your body may not tolerate. Then you blame the carnivore diet, low carb, salt, fat, or your lack of willpower, when the problem might come from an industrial detail repeated three times a week.
At this point, the real question isn’t just which sardine is “good” or “bad.” The real question is what you seek to achieve with your diet: calm inflammation, stabilize energy, improve digestion, lose fat, support training, or simply simplify your terrain to better read your reactions.
Two people can eat the same can and not get the same response. One digests perfectly. The other bloats, retains water, feels nauseous, experiences reflux, cravings, or strange fatigue. It’s not always the sardine. Sometimes it’s the oil, the sauce, histamine, salt, frequency, digestive context, or current nervous terrain.
Before changing your diet again, maybe learn to read more finely what you’re already eating.
