Modern nutrition loves to add up numbers. So many milligrams of iron, so much calcium, so many units of vitamin A, so many grams of protein, so many omega-3s. But the human body doesn’t consume a spreadsheet. It absorbs, transforms, transports, activates, or rejects. Between the nutrient listed on a label and the nutrient actually used by tissues, there can be a vast gulf. Bioavailability allows us to confront this gap directly.
The misunderstanding is simple: presence is confused with utilization. A food can contain a nutrient without it being well absorbed.
